Maw Maw’s Scalloped Potatoes

While our family often chooses rice over potatoes, nothing can compare to the warmth and comfort that a potato dish brings. Growing up my Mom often made Betty Crocker’s Scalloped Potatoes straight out of the box. In my mind, it was the potato equivalent to Kraft Mac & Cheese, but we loved it. Now that my Mom has a little more time on her hands she wouldn’t dream of serving Scalloped Potatoes out of a box and has perfected her recipe. This dish may take a little time, but it is one of my favorite ways to eat potatoes. Warm, creamy and cheesy, this is a dish that your whole family will enjoy.

Scalloped Potatoes

Prep Time: 10 minutes
Cook Time: 1 hour

Total Time: 1 hour 10 minutes

Yield: 8 servings

Ingredients:

  • ¼ cup chopped chives

  • ½ cup heavy whipping cream

  • 1 ½ cups shredded sharp cheddar

  • 1 cup shredded Parmesan cheese

  • 1tsp. black pepper

  • 2 tsp salt

  • 4lbs potatoes (thinly sliced)

Instructions:

  1. Pre-heat oven to 400 degrees F and spray casserole dish with non-stick cooking spray.

  2. Divide sliced potatoes into 2 groups.

  3. Cover bottom of casserole dish evenly with first group of potatoes.

  4. Sprinkle layer of potatoes with ½ tsp salt, ½ tsp pepper, ¼ cup of Parmesan.

  5. Drizzle ½ cup of cream over layer of potatoes.

  6. Repeat steps 3-5.

  7. Top with remaining salt, pepper and cheeses.

  8. Bake for one hour at 400 degrees.

  9. Sprinkle top with chopped chives.
