Hibachi Fried Rice

* Recipe includes 6 cups of cooked white rice. Add 20 minutes of preparation time to cook this before beginning this recipe.
Serves: 4
Ingredients:
6 cups cooked white rice cooled
1 tbsp olive oil
1 cup frozen peas and diced carrots
1 cup diced onions
1/2 stick butter
1/2 cup soy sauce
2 tbsp garlic powder
salt and pepper
2 eggs
You will also need:
Flat top griddle or Blackstone
Medium bowl
Instructions:
Preheat griddle to low-medium heat.
Add 1 tbsp of olive oil to the heated griddle and spread it around with your spatula. Add the diced onions and peas and carrots blend to the oiled griddle and sauté for 3 - 5 minutes or until tender. Move cooked vegetables aside to the cooler side of the griddle.
Add the cooled rice to the griddle. Use your spatula to loosen and toss the rice while it heats.
When rice is heated through, make a well in the middle of the rice and add half a stick of butter, soy sauce, garlic powder, salt, and pepper to the well and mix thoroughly into the rice as butter is melting.
Add the cooked vegetables to the rice and mix with your spatula until combined.
While rice is cooking crack two eggs on the griddle near the rice and scramble with your spatula. When eggs are cooked through mix the scrambled eggs in with the rice until combined.
Serve with Hibachi Chicken & Vegetables and enjoy!
