Fried Potato Wedges (Taters)
When you grow up in a small community, restaurant options are limited and often times the best food is found in a gas station. (I’m not kidding.) I’ve spent my entire life eating the best gas station food from the TigerStop in Swansea, SC.
Although the actual gas station has gone through many name changes from Stillenger’s to the Exxon to the Sunoco/TigerStop, it has always been a community favorite.
Whether you are in the mood for onion sausage on white bread, fried shrimp, or an order of their most popular “Taters”, the TigerStop is the place to go!
This recipe is my re-creation of the TigerStop’s Taters. It is a delicious side dish to Uncle Bunny’s Butter Burgers and a family favorite.

Ingredients:
4 Russet potatoes
1 egg beaten
½ cup all purpose flour
1 tsp garlic salt
¾ tsp black pepper
¼ tsp celery salt
¼ tsp salt
24oz. bottle of vegetable oil
Instructions:
Thoroughly scrub and wash potatoes. Peeling is not necessary.
Add vegetable oil to a large skillet or Dutch oven and heat to 375 degrees F.
Combine flour and spices in a shallow dish.
Slice potatoes into ½ inch thick wedges
Dip potato slices into beaten egg and then into flour mixture.
Place coated potato slices into oil and fry for 5-7 minutes or until golden brown.
Drain excess grease onto a paper towel.
Sprinkle with additional salt to taste.
Serve with dipping sauce of your choice.
