A couple of weeks ago I shared a Pear Salad on TikTok and someone asked me if it was satire. Fortunately or unfortunately, it was not satire!

I just responded in the only way that I knew how and simply said “Bless your heart”.

The term “salad” is used very loosely in the south. This Carrot and Raisin Salad may get a double take from folks in different parts of the country but if you grew up in the south, you are sure to remember this classic.

My Memaw absolutely loved Carrot & Raisin Salad. I cannot count the number of times she sent me to a local restaurant called Lizard’s Thicket to pick up a little bowl of Carrot & Raisin Salad for her during the last months of her time here on earth. Last week was the third anniversary of her passing and this recipe will always remind me of her.

Sunday in SC Carrot Raisin Salad 2

Yield: Serves 12

Ingredients for Salad:

1 tbsp lemon juice 
½ cup granulated sugar 
½ cup Duke’s Mayonnaise 
¾ cup golden raisins 
4 ½ cups shredded carrots 
1 8oz. can crushed pineapple  

Instructions:

  1. Mix all ingredients until combined.

  2. Add to serving bowl.

  3. Place a few raisins on top for garnish.
