Broccoli Cheddar Soup
Every now and then it’s unusually cold here in South Carolina in December. Right now is one of those times. It’s the kind of weather that makes you crave something warm and comforting. Whenever the temperatures drop, I always think of my sister-in-law Freedom’s Broccoli Cheddar Soup recipe.
Freedom grew up on a farm in Allendale County, SC, where she developed an incredible talent for all things veggies. She has a knack for turning simple, fresh ingredients into dishes that warm your heart and soul. This recipe is no exception—it’s creamy, cheesy, and loaded with tender broccoli.
It’s the perfect bowl of southern comfort for a chilly day in winter.

Total Time: About 35 minutes
Serves: 4
Ingredients:
4 cups broccoli florets (fresh)
1/2 cup shredded carrots
2 cups chicken broth
1 cup light cream
2 cups shredded sharp cheddar cheese
2 tablespoons butter
2 tablespoons all-purpose flour
1/2 cup diced onion
1/2 teaspoon garlic powder
Salt and pepper to taste
You will also need:
Medium pot
Large pot
Potato masher or blender
Instructions:
Cook the Broccoli:
Steam or boil the broccoli in the chicken broth for about 5–7 minutes until tender.
Use a potato masher or a blender to lightly mash the broccoli, leaving some chunks for texture.
Make the Base:
3. In a large pot, melt the butter over MEDIUM heat.
4. Add the diced onion and shredded carrots and cook until softened.
5. Stir in the flour and cook for 1–2 minutes to create a roux.
Add Milk and Broth:
6. Gradually whisk in the milk to the base until smooth.
7. Then, slowly add the broth with the broccoli into the base, stirring well to combine.
Season and Simmer:
8. Stir in garlic powder, salt, and pepper.
9. Let the soup simmer for 5–10 minutes, stirring occasionally.
Add the Cheese:
10. Reduce the heat to LOW and slowly stir in the shredded cheddar cheese until melted and smooth.
Serve:
11. Serve hot with crusty bread or Crescent Rolls.
*Pro Tip: This recipe is quick to make, rich in flavor, and perfect for a cozy meal! I like to use a little extra shredded cheddar, broccoli, carrots, and/or bacon bits as toppings or served on the side, but this is optional.
