Uncle Bunny’s Barbecue Chicken
My brother Bunny is a true grill master. He is a certified South Carolina BBQ judge and he loves all things BBQ—from the meat, to the smoke, to the grill, and how it all works together.
My favorite dish off the grill is hands down, his BBQ chicken leg quarters, and let me tell you, this chicken makes my family happy every single time!
Prep Time: 40 minutes*
*Allowing the chicken to marinate overnight improves flavor but can be done just before as well.
Cook Time: 40 minutes
Total Time: 1 hour 20 minutes
Yield: Serves 6
Ingredients:
6 Chicken Leg Quarters (leg with thigh attached)
2 cups apple cider vinegar
1 cup honey
1 cup olive oil
2 tablespoons Frank’s Red Hot Original Hot Sauce
1 tablespoon garlic powder
2 teaspoons salt
1 teaspoon pepper
Instructions:
First start by making the marinade. In a large saucepan bring all ingredients except chicken to a boil. Reduce to medium and simmer for 10 minutes.
Remove from heat and cool to room temperature.
Reserve half of the marinade in an airtight container and place in the refrigerator to use later for basting.
Pour the other half of the marinade into an extra large zip lock bag and add chicken leg quarters to the bag.
Place the bag in the refrigerator overnight or for at least 40 minutes. (Overnight is definitely better.)
Drain marinade from bag.
Heat grill to 350-375 degrees F.
Place chicken on the grill.
Grill chicken for approximately 20 minutes per side while periodically basting with reserved marinade.
Grill chicken until juices run clear or until internal temperature reaches a minimum of 165 degrees F.
