Pineapple Tarts

 

There are some foods that take my mind immediately to vacation and pineapple is definitely one of those foods! Whether you plan to share these golden, buttery delicious crusted tarts with your loved ones this summer, or simply want to savor them as an afternoon indulgence on your own, they offer a taste that is hard to resist!

Cook Time: 15 minutes
Total Time: 35 minutes 

Yield: 12 servings 

Ingredients:

Main:

  • 1 package Puff Pastry

  • 12 slices of pineapple (canned or fresh)

  • ¾ cup light brown sugar

For the Glaze:

  • 2 cups powdered sugar

  • 3 tbsp milk

  • ½ tsp vanilla extract

Instructions:

  1. Preheat oven to 350 degrees F and spray a baking sheet with non-stick cooking spray.

  2. Cut puff pastry sheet into 6 equal squares.  (Each package contains two sheets of puff pastry.)

  3. Arrange puff pastry squares evenly onto baking sheet and place a slice of pineapple in the center of each square. 

  4. Scoop one tablespoon of light brown sugar onto the center of each pineapple and spread gently so that the pineapple is covered.

  5. Cut another square around each piece of pineapple out of the puff pastry—inside of the border of the first square.  

  6. Gently lift each corner up and press into the center of the pineapple.  This design will form a flower, or four-point start formation.  

  7. Bake at 350 degrees F for 15 minutes.  

  8. While tarts are baking, whisk all glaze ingredients in a small mixing bowl.

  9. Remove tarts from oven once finished baking and transfer them to a serving tray. 

  10. Drizzle them with glaze and serve warm!
