Coconut Chess Pie
My Daddy loves an old timey recipe. He loves it even more if it takes a really long time to make. In fact, if he thinks it took you 4 hours to make a dish, it holds a special place in his heart.
But, we all know that longer preparation doesn't always make a better recipe. Sometimes, the quickest, easiest recipes are the most delicious!
That’s why I love this Coconut Chess Pie. This recipe originated from the Baptist Women of the First Baptist Church of Gaston, South Carolina. It takes a quick 15 minutes to prep and then you just pop it into the oven. It’s delicious and makes a great dessert for any occasion! Enjoy!
Prep Time: 15 minutes
Bake Time: 40 minutes
Total Time: 55 minutes
Yield: 8 servings
Ingredients:
2 eggs, beaten
½ cup & 6 tablespoons sugar
¼ cup self-rising flour
1 cup whole milk
¼ stick of melted butter
3.5 oz. flaked coconut
½ tsp vanilla
Instructions:
Preheat oven to 350 degrees F.
Add all ingredients to a medium size mixing bowl and mix well.
Pour mixture into a greased 9-inch pie pan.
Bake at 350 degrees F for 40 minutes or until pie is set and top is lightly browned.
Let pie cool for at least 30 minutes before serving.
*This pie forms its own crust, so no pie crust is necessary.
