Chocolate Covered Marshmallow Cake

Ingredients:
Cake:
3 cups cake flour
1 tsp salt
1 ½ tsp baking soda
4 cups sugar
1 cup sour cream at room temperature
4 large eggs
1 cup vegetable oil
9 ounces semi sweet chocolate
1 tbsp vanilla extract
2 cups hot coffee
Icing:
3 sticks unsalted butter at room temperature
2 tbsp milk
2 tsp vanilla extract
9 oz. semi sweet chocolate, melted
3 cups powdered sugar
Filling:
8 ounces cream cheese at room temperature
8 ounces marshmallow fluff
1 tsp vanilla
Instructions:
Cake Instructions:
Preheat oven to 325 degrees F and spray three 9 inch cake pans with non stick cooking spray.
In a large bowl, mix flour, sugar, baking soda and salt, until combined and set aside.
Add chocolate to a separate bowl and pour hot coffee and 1 tbsp of vanilla over the chocolate. Let it sit for 2 minutes and then stir until smooth.
In a third bowl whisk together eggs and oil, then fold in room temperature sour cream and chocolate/coffee mixture.
Add the egg/chocolate mixture to dry ingredients and mix until combined.
Pour equally into cake pans and bake at 325 degrees for 50 minutes.
Remove cakes from oven and completely cool on a baking rack before frosting.
While cake is cooling prepare filling and icing. Instructions are below.
Once cooled, place the first layer down on your cake stand or serving plate and spread filling evenly over the first layer.
Add the second layer on top of the filling and repeat step 8 by spreading filling evenly over layer this layer.
Add the third layer onto the cake and cover entire cake with chocolate icing, carefully smoothing all sides and top.
Filling Instructions:
In a large mixing bowl, mix cream cheese, vanilla, and marshmallow fluff with a hand mixer until smooth.
Icing Instructions:
With a hand mixer, mix butter and milk until smooth.
Add 1 tsp vanilla and melted chocolate and mix until combined.
Slowly add powdered sugar and mix until combined.
