Southern Butter Beans with Bacon

 

Butter beans are my all-time favorite vegetable (other than fried okra). I'd rather have a bowl of fresh butter beans than any other vegetable.

But, fresh butter beans can sometimes be expensive and difficult to find during cooler seasons.

That’s why my favorite butter beans are from Pictsweet Farms. You can find them in the frozen section.

They’re delicious and allow me to keep fresh tasting vegetables on my table all year long.


Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes

Ingredients:

4 pieces bacon
1 12oz. package frozen Pictsweet Butter Beans
1 tbsp. Goya Chicken Boullion (Powdered)
1/2 teaspoon ground black pepper
1/4 teaspoon salt

Instructions:

  1. Add bacon to saucepan and cook for 8-12 minutes on medium heat until crispy.

  2. Remove bacon and set aside.

  3. Place frozen beans in a saucepan with bacon drippings and cover with water.

  4. Add Goya, Salt, Pepper and bring to a boil.

  5. Cover and simmer on medium high for 40 minutes.

  6. Remove from heat, crumble bacon into beans.

  7. Serve as a side dish or main course with a side of corn bread.
