Sour Cream Mashed Potatoes

 

I love potatoes!! I have always loved potatoes. Baked potatoes, mashed potatoes, scalloped potatoes... ok, you get the idea. I’ll stop in order to refrain from sounding like the Forest Gump of potatoes.

Sunday in South Carolina Mashed Potatoes

Our family spent last Thanksgiving in Pigeon Forge, TN and had Thanksgiving dinner at Paula Deen’s Family Kitchen. After (I kid you not) a FOUR hour wait, we sat down and enjoyed a delicious meal which included sour cream mashed potatoes.

Since that day MawMaw and I knew that these were the potatoes that needed to be served with her meatloaf. We have dreamed of these potatoes until we recreated the recipe as close as our memory would allow.


Prep Time: 20 minutes
Cook Time: 25 minutes
Total Time: 45 minutes

Ingredients:

2lbs potatoes
1 tsp salt (more to taste)
1 stick butter
1 cup heavy cream
8oz sour cream
½ tsp black pepper

Instructions:

  1. Peel potatoes. 

  2. Fill a large pot  ¾ full of water. 

  3. Add potatoes and salt to the pot of water and heat over medium/high heat until water is boiling. 

  4. Boil potatoes in salted water for 20 minutes. 

  5. Drain potatoes and return them to the empty pot. 

  6. Heat cream, salt, pepper, and butter over medium heat in a separate pot until butter is fully melted and cream begins to bubble.   

  7. As soon as cream begins to bubble, pour over cooked potatoes. 

  8. Mash potatoes with a potato masher or mix with a hand mixer. 

  9. Once potatoes are mixed, add sour cream and stir until desired consistency is reached. 

  10. Add extra salt to taste.  Serve with MawMaw’s MeatLoaf.
