Uncle Bunny’s Easy Pulled Pork

The word barbecue (or BBQ) means a lot of different things to a lot of different people. It’s used as a verb and a noun. In some parts of the country for example folks say they are going to barbecue, meaning they are throwing some hot dogs and burgers on the grill. 

In Texas barbecue usually means brisket. But here in South Carolina, barbecue absolutely means pork, pulled pork, or chopped whole hog. 

My brother, who my kids affectionately call Uncle Bunny, is truly the BBQ Master. He is a Certified Barbecue Judge for the State of South Carolina and I’d put him up against even the greatest grill masters of Texas.

He can precisely smoke a whole hog for hours overnight and it will be mouthwatering delicious every time.

But, if you don’t quite have time to smoke a whole hog on a Thursday night, but still want to make pulled pork sandwiches for your family, this slow cooker recipe is a winner. Just pop it in before you go to work and by supper time you’re guaranteed an absolutely delicious meal. It’s the perfect shortcut for busy families.


Prep Time: 5 minutes
Cook Time: 11 hours 30 minutes
Total Time: 11 hours 35  minutes

Ingredients:

1 (approx. 3lb) Boston Butt Roast (Pork Shoulder)
¾ cup Apple Cider Vinegar
1 cup BBQ sauce of your choice (I suggest Cooper Kinney’s for a NC style pepper vinegar)
1 tsp salt
1 tsp pepper 

Instructions:

1. Place roast in slow cooker.

2. Pour apple cider vinegar over roast and sprinkle with salt and pepper. 

4. Cook on low for 11 hours.

5. Do not remove the lid during cook time. Remember, if you're looking it ain't cooking

6. Remove pork roast from slow cooker and place on platter. 

7. Remove and discard liquid in slow cooker.

8. Chop/Pull Pork, removing and discarding any fatty pieces

9. Return pork to the slow cooker.

10. Add BBQ sauce of your choice and cook on low for another 30 minutes.  

11. Serve warm on buns as sandwiches or as a main course.
