Flank Steak Pinwheels

 

Y'all know that country cooking is my favorite but every so often when we feel like something a little different my mind always goes to these flank steak pinwheels.  Flank steak is an affordable, delicious and versatile beef option that even the kids will love.

Yield: 6 servings  

Ingredients:

  • 1.5lb flank steak

  • 1 ½ cup grated parmesan cheese

  • 2 tbsp olive oil

  • 2 cups fresh chopped spinach

  • ½ tsp salt

  • ½ tsp pepper

  • 2 tsp parsley

  • Zest from 1 lemon


Instructions:

  1.  Preheat oven to 375 degrees F. 

  2. Cover steak with plastic wrap and pound out very thin.

  3. Season both sides of the flank steak with salt, pepper and parsley.

  4. After steak is seasoned, sprinkle cheese and spinach over the entire steak, then top with lemon zest.  

  5. Starting at the side closest to you, begin rolling the steak up tightly until a roll is formed.  

  6. Use kitchen twine to tie up the steak roll. You will use approximately 7 pieces of twine, depending on the size of your flank steak.

  7. Heat olive oil in a sautee pan over medium heat.  

  8. Place tied up steak roll in the pan and sear for 2 minutes per side before transferring to baking sheet.

  9. Once the steak roll has been seared for 2 minutes per side and transferred to a baking sheet, place in the preheated oven for an additional 8 minutes.

  10. When finished, take out the steak, and using a very sharp knife, slice the flank steak roll between each piece of twine. You should end up with 7 or 8 pinwheels.

  11. Serve warm with side of your choice.
