Peach Caprese Salad - Sunday in South Carolina

Summer is peach season in South Carolina and I love nothing more than a fresh South Carolina Peach.  So far this season I've made peach tarts, peach cobbler, and even a peach glaze for pork chops.

But, one of my favorite ways to serve peaches is in this Peach Caprese Salad. Sweet and savory at the same time, this salad takes me from a fresh roadside peach farm stand in South Carolina to the coast of Italy in the same bite. 

This recipe is quick, simple, and the perfect addition to your spring and summer cookouts.

Total Time: 10 minutes

Servings: 8

Ingredients:

  • 4 peaches, pitted

  • 2 tomatoes

  • 1 cup fresh basil torn

  • 1 tsp salt

  • 1 tsp black pepper

  • 4 tbs extra virgin olive oil

  • 16 oz. mozzarella pearls

  • 2 tbsp balsamic glaze

Instructions:

  1. Chop tomatoes and peaches into bite size (1 inch) pieces and add to a medium size serving bowl.

  2. Add all other ingredients to the bowl with the peaches and tomatoes and gently toss until combined.

  3. Drizzle the top of salad with additional balsamic glaze and serve right away.
