MawMaw’s Old Fashioned Macaroni Salad

 

Salad. When I think of the word salad I imagine a large bowl full of leafy greens topped with beautiful vegetables. Fortunately, in South Carolina, a salad can be anything you please, as long as it’s mixed with a homemade mayonnaise based dressing.

I believe most people use the term “pasta salad” these days but in a region where we still call any type of pasta a noodle, we just call it Macaroni Salad and it is definitely my favorite type of salad.

Prep Time: 10 minutes
Cook Time: 12 minutes
Chill Time: 20 minutes (minimum)
Total Time: ~45 minutes


Ingredients:

2 cups macaroni noodles
4 hard boiled eggs diced 
¼ cup finely chopped celery
¼ cup sweet pickle relish
¼ cup finely chopped purple onion
1.5 cups Duke’s Mayonnaise
1 tbsp Red Wine Vinegar
1 tsp sugar
1 tsp salt
1 tsp pepper


Instructions:

  1. Boil macaroni noodles according to the package instructions in salted water. Strain and set aside.

  2. In a large mixing bowl combine pepper, salt, sugar, red wine vinegar and mayonnaise.

  3. Once combined, add cooked macaroni noodles, boiled eggs, celery, sweet pickle relish and red onion.

  4. Gently stir and mix until thoroughly blended Do not over mix.

  5. Refrigerate for at least 20 minutes prior to serving.
