Italian Chopped Salad

 

I don’t think it is a secret that most southern salads are just vegetables covered in any variation of Duke's Mayonnaise and vinegar.

But this salad is just the opposite.

My Mama (also known now as MawMaw) loves spaghetti. She REALLY loves spaghetti. In an effort to find a side dish to go along with her love for spaghetti, this Italian chopped salad was discovered.

And while Maw Maw still only eats the spaghetti, the rest of us have fallen in love with this Italian Chopped Salad.

Cook Time: 0 minutes
Total Time: 15 minutes

Ingredients for Salad:

1 large head of romaine lettuce chopped
2 cups cherry tomatoes quartered
½ cup red onion chopped
1 cup chopped pepperoni
1 cup chopped salami
1 cup chopped cucumber
1 cup fresh mozzarella pearls halved
½ cup sliced pepperoncini
¼ cup fresh chopped basil
2 tbsp grated parmesan

Instructions:

  1. Toss all ingredients together in a large salad bowl.

  2. Top with Chopped Salad Dressing. (Recipe below!)


Ingredients for Chopped Salad Dressing:

4 tbsp Dijon mustard
4 tbsp olive oil
4 tbsp apple cider vinegar or fresh lemon juice
2 tbsp honey
2 small garlic clove, grated or minced
1/2 tsp sea salt, more to taste
1/2 tsp freshly ground black pepper to taste

Instructions:

  1. Add all ingredients to a jar and secure the lid.

  2. Shake the jar until all ingredients are well blended.

  3. Pour over the chopped salad.

  4. Store leftover dressing in the refrigerator for up to two weeks.
