Honey Glazed Roasted Carrots

 

These tender, caramelized, honey-glazed carrots are the perfect balance of sweet and savory. They make an easy and delicious side dish for any meal!

Servings: 4-6

Ingredients:

  • 1 lb (about 4 cups) carrots, peeled and sliced into ½-inch thick rounds or left whole if small

  • 2 tablespoons unsalted butter

  • 2 tablespoons honey

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ¼ teaspoon cinnamon (optional, for warmth)

  • 1 teaspoon fresh thyme or parsley (optional, for garnish)

You will also need:

  • Medium Pot

  • Large Skillet

Instructions:

  1. Cook the carrots: Bring a pot of salted water to a boil. Add the carrots and cook for 4-5 minutes until just tender. Drain and set aside.

  2. Make the glaze: In a large skillet over MEDIUM heat, melt the butter. Stir in the honey, salt, pepper, and cinnamon (if using).

  3. Glaze the carrots: Add the carrots to the skillet and toss to coat in the honey butter. Cook for another 5-7 minutes, stirring occasionally, until the carrots are caramelized and glossy.

  4. Garnish and serve: Sprinkle with fresh thyme or parsley if desired. Serve warm.
