Honey Glazed Roasted Carrots

Ingredients:
1 lb (about 4 cups) carrots, peeled and sliced into ½-inch thick rounds or left whole if small
2 tablespoons unsalted butter
2 tablespoons honey
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon cinnamon (optional, for warmth)
1 teaspoon fresh thyme or parsley (optional, for garnish)

Instructions:
Cook the carrots: Bring a pot of salted water to a boil. Add the carrots and cook for 4-5 minutes until just tender. Drain and set aside.
Make the glaze: In a large skillet over MEDIUM heat, melt the butter. Stir in the honey, salt, pepper, and cinnamon (if using).
Glaze the carrots: Add the carrots to the skillet and toss to coat in the honey butter. Cook for another 5-7 minutes, stirring occasionally, until the carrots are caramelized and glossy.
Garnish and serve: Sprinkle with fresh thyme or parsley if desired. Serve warm.
