Corn Salad

 

As summer calls us outdoors for picnics and cookouts, there’s nothing quite like a vibrant summer salad. Packed with fresh produce and the perfect hint of zesty lime, this salad is refreshing and crisp.  

Whether you serve this as a side dish with barbecue or as an appetizer with tortilla chips, this recipe will surely please everyone in the family.

Servings: 6

Ingredients:

  • 4 cups frozen or fresh corn kernels 

  • 1 cup halved cherry tomatoes

  • 1 tsp salt 

  • 1 tsp pepper 

  • 1 red bell pepper finely chopped 

  • 1/4 cup red onion finely chopped 

  • 1 jalapeno finely chopped (seeds removed) 

  • ½ cup chopped cilantro leaves 

  • 3 tbsp lime juice 

  • ¼ cup sour cream 

  • 2 tbsp Duke’s Mayonnaise 

  • ½ tsp cumin 

  • ¼ tsp paprika 

  • ½ tsp chili powder 

  • 1/3 cup cotija cheese grated

Instructions:

  1. Add all ingredients to a medium mixing bowl and stir until combined.  

  2. Serve chilled as a summer side dish standalone, or chilled with tortilla chips or Fritos Scoops.
