Corn Salad

Ingredients:
4 cups frozen or fresh corn kernels
1 cup halved cherry tomatoes
1 tsp salt
1 tsp pepper
1 red bell pepper finely chopped
1/4 cup red onion finely chopped
1 jalapeno finely chopped (seeds removed)
½ cup chopped cilantro leaves
3 tbsp lime juice
¼ cup sour cream
2 tbsp Duke’s Mayonnaise
½ tsp cumin
¼ tsp paprika
½ tsp chili powder
1/3 cup cotija cheese grated
Instructions:
Add all ingredients to a medium mixing bowl and stir until combined.
Serve chilled as a summer side dish standalone, or chilled with tortilla chips or Fritos Scoops.
