Collard Greens

Prep Time: 20 minutes 
Cook Time: 2 hours 30 minutes
Total Time: ~2 hours 50 minutes

Serves: 6-8

Ingredients: 

  • 1 large bunch collard greens

  • 1 teaspoon pepper

  • 1 tablespoon Seasoning Salt (I use Lawry's)

  • 1 tablespoon chicken base (paste form of bouillon, comes in a small jar)

  • 1 tablespoon hot sauce

  • 1/2 lb smoked meat (ham hocks, smoked turkey wings, or smoked neck bones)

  • 8 tablespoons (1 stick) butter

You will also need:

  • Large pot

Instructions:

  1. In a large pot, bring 3 quarts of water to a boil.

  2. Add smoked meat, pepper, seasoning salt and hot sauce.

  3. Reduce heat to MEDIUM and cook for 1 hour.

  4. Wash the collard greens thoroughly. Remove the stems that run down the center by holding the leaf in your left hand and tearing the leaf down with your right hand. The leaves in the heart of the collards don’t need to be stripped as they should be soft.

  5. Stack 6 to 8 leaves on top of one another, roll up, and slice into 1/2 to 1-inch thick slices.

  6. Place greens in pot with meat and Cook for 45 to 60 minutes, stirring occasionally.

  7. When done, taste and adjust seasoning. Then, add the butter.

  8. Serve with favorite dish as a side
