Uncle Bunny’s Barbecue Chicken Lollipops
Barbecue chicken is one of my favorite dishes, specifically my brother’s BBQ chicken. He has truly perfected the art and each time he fires up the grill we are all standing around waiting for a piece of his tangy and tender chicken. While we love all types of chicken, my family prefers the drumstick. This recipe is a fun and affordable protein option to feed your hungry family that will please adults and kids alike.

Cook Time: 1 minute
Total Time: 1 hour 30 minutes
Serves: 12
Ingredients:
12 chicken drumsticks
6 tbsp Heath Riles Chicken Rub
1 cup BBQ sauce of your choice
You will also need:
Cupcake pan
Baking sheet
Instructions:
Preheat grill to 375 degrees F.
Cut each drumstick around the bone, right above the meaty part.
Remove the skin and cartilage from the upper part of the bone.
Season the drumsticks evenly with chicken rub.
Place drumsticks in a cupcake pan (1 per slot) and then set the cupcake pan on the baking sheet. Place everything on the grill. (Alternatively you can also use a chicken rack if you have one.)
Cook for approximately 30-45 minutes or until internal temperature reaches 150 degrees F.
Baste drumsticks with barbecue sauce of your choice.
Cook for another 10 minutes or until internal temperature reaches 165 degrees F.
Remove from grill and let rest 10 minutes before serving.
