Aunt Bobbie’s Mayonnaise Biscuits

 

My Daddy’s sister, Bobbie, was 14 years older than him. She passed away when I was just in the 8th grade but memories of her have remained with me. She was very beautiful and proudly held the title of Swansea High School Homecoming Queen of 1960.

She was a pianist and during a time when most women stayed home to raise children and care for their husbands, she was a professional who managed to succeed in the business world while also caring for her family. She wore business suits and worked at a bank on Main Street in Downtown Columbia and I thought she was Super Woman. 

Some Sundays I would go with her to Christian Fellowship Baptist Church in Gaston, SC. After church we would go to her brick house, where family photos lined an entire wood paneled hallway. She’d cook Sunday dinner while giving me small tasks to help out like placing pecans on the top of the pecan pies before they went into the oven. 

I sadly don’t have many of her written recipes but I vividly remember standing in her kitchen one Sunday as she scooped mayonnaise into a mixing bowl for me to stir into flour and milk. We were making something called Mayonnaise Biscuits! 

What I remember most about cooking with her was that she made Sundays a priority for her family and food to me equals family. 

This recipe is simple, delicious and will be the perfect addition to your very own Sunday Dinner. 


Prep Time: 5 minutes
Cook Time: 20-25 minutes
Total Time: 25 minutes

Servings: 18-20 small to medium biscuits

Ingredients:

  • 1 cup Duke’s Mayonnaise

  • 2 cups whole milk

  • 4 cups self-rising flour

Instructions:

  1. Preheat oven to 400 degrees F. 

  2. Spray a baking sheet with non-stick cooking spray. 

  3. Mix all ingredients in a medium bowl until combined.

  4. Using a small ice cream scooper or spoon, scoop out and drop biscuits onto greased baking sheet, two inches apart.

  5. Bake for 20-25 minutes at 400 degrees F or until golden brown. 

  6. Serve warm with butter.
