Shrimp Scampi

Serves: 4

Ingredients:

  • 1 lb extra large shrimp, peeled and deveined

  • ½ tsp salt

  • ¼ tsp pepper

  • 2 tsp Old Bay Seasoning (divided)

  • 1 tbsp olive oil

  • 4 cloves minced garlic

  • 1 ½ cups white wine

  • ¼ cup lemon juice

  • ½ cup butter at room temperature

  • 2 tbsp chopped parsley

  • 2 tbsp parmesan cheese

You will also need:

  • Large skillet

Instructions:

  1. Season both sides of the shrimp with salt, pepper & Old Bay Seasoning.

  2. Heat olive oil in a large skillet over MED-HIGH heat. Add shrimp and cook for 2-3 minutes per side. Transfer cooked shrimp to a plate and set aside.

  3. Add minced garlic to the skillet and cook for about 1 minute.

  4. Add white wine and lemon juice to the pan, using a spatula to scrape up any bits on the bottom. Bring to a boil then reduce to low and simmer for 5 minutes.

  5. Stir in butter and remaining Old Bay Seasoning. Simmer until the butter melts into the sauce.

  6. Add shrimp back to the skillet. Add salt and pepper to taste and garnish with parsley and parmesan cheese.

  7. Serve independently as an entree or with pasta.
