Uncle Bunny’s Salmon Patties
Growing up I have very clear memories of my Mama making salmon patties for my Dad. She usually served them with grits or rice & tomatoes.
I cannot recall a single time when I ate the salmon patties and the smell alone wouldn’t send me straight to my room.
When I think of southern food, salmon does not come to mind, but any type of fried fish cake most definitely comes to mind and if I had to guess, I’d say that southerners began eating salmon patties to stretch food to feed their families during hard times.
My brother started making Salmon Patties and as an adult I've discovered that they are absolutely delicious, especially on the side of a bowl of cheese grits.

Cook Time: 20 minutes
Total Time: 30 minutes
Yield: About 18 patties
Ingredients:
3 14oz. cans of salmon
3 cups Panko breadcrumbs or 3 cups Saltine Crackers crushed
3 eggs
2 tsp salt
2 tsp pepper
1 medium onion chopped finely
1 cup vegetable oil
1 lemon quartered
Instructions:
Pour all three cans of salmon into a mixing bowl. Remove bones, skin and discard.
Add panko, eggs, salt & pepper and onion to the bowl. Mix until blended.
Pour mixture onto a cutting board and gently flatten with your hands.
Use a biscuit cutter to cut out salmon patties. Approximate size around 3” round by 1.5” thick.
Heat oil over medium heat in a saute pan or iron skillet.
Fry salmon patties in oil for approximately 5 minutes per side.
Drain on a paper towel, paper plate or baking rack.
Squeeze fresh lemon over patties just before serving and enjoy!
