New Orleans Style Red Beans and Rice with Sausage

Cook Time: 7 hours
Total Time: Approximately 7.5 hours

Yield: 3 1/2 quarts

Ingredients:

  • 1 lb dried red beans

  • 1 green bell pepper, chopped

  • 3 celery stalks, chopped

  • 1/2 lb andouille sausage, sliced

  • 1 medium onion, chopped

  • 3 garlic cloves, chopped

  • 3 tbsp Creole seasoning

  • 7 cups of water

  • Garnish (optional): sliced green onions

You will also need:

  • Slow Cooker

Instructions:

  1. Place beans, water, bell pepper, onion, celery, garlic, sausage, and seasoning in a 4-quart slow cooker.

  2. Cook, covered, at HIGH for 7 hours or until beans are tender.

  3. Serve hot with cooked rice. Garnish if desired.
