Loaded Potato Soup
It’s officially soup season! Soup is the perfect weeknight dinner, especially if it has been in the slow cooker all day and requires minimal prep after a long day of work. This loaded potato soup is hearty, hot and delicious.

Cook Time: 6 hours
Total Time: 6 hours, 10 minutes
Yield: 6 servings
Ingredients:
4 cups potatoes, peeled and chopped (¾ inch cubes)
2 14 oz cans of chicken broth
1 10.75 oz can cream of chicken soup
1 onion chopped
1 8 oz block of cream cheese
½ tsp black pepper
Self Serve Toppings - Shredded Cheddar, bacon bits, chopped green onions, sour cream
Instructions:
Place potatoes, chicken broth, cream of chicken soup, onions and pepper in a slow cooker.
Cover and cook on low for 5 hours.
Use an immersion blender to blend until smooth.
Add cream cheese, cover and cook for an additional one hour.
Stir in cream cheese.
Serve hot with toppings of choices.
