Loaded Potato Soup

It’s officially soup season! Soup is the perfect weeknight dinner, especially if it has been in the slow cooker all day and requires minimal prep after a long day of work. This loaded potato soup is hearty, hot and delicious.

Cook Time: 6 hours
Total Time: 6 hours, 10 minutes

Yield: 6 servings

Loaded Potato Soup

Ingredients:

  • 4 cups potatoes, peeled and chopped (¾ inch cubes)

  • 2 14 oz cans of chicken broth

  • 1 10.75 oz can cream of chicken soup

  • 1 onion chopped

  • 1 8 oz block of cream cheese

  • ½ tsp black pepper

  • Self Serve Toppings - Shredded Cheddar, bacon bits, chopped green onions, sour cream

Instructions:

  1. Place potatoes, chicken broth, cream of chicken soup, onions and pepper in a slow cooker. 

  2. Cover and cook on low for 5 hours.

  3. Use an immersion blender to blend until smooth.

  4. Add cream cheese, cover and cook for an additional one hour. 

  5. Stir in cream cheese. 

  6. Serve hot with toppings of choices.
