Korean Cucumber Salad

During the first Summer of Covid I found myself with an abundance of cucumbers. We were all working from home, cooking more at home, and I had used cucumbers in every recipe you could imagine. I was on a mission for something new and different.

I found this Korean Cucumber Salad recipe and it was an instant family favorite. I take it to every single pot luck, office party, and cookout. People always ask for the recipe and we never have any leftovers. If you are looking for a side dish or salad to please your guests or family, this is the recipe for you.

Ingredients:

2 cucumbers
2 green onions
¼ cup rice vinegar
2 tbsp soy sauce
1 tbsp sugar
¼ tsp red pepper flakes
½ tsp sesame seeds


Instructions:

  1. Slice the unpeeled cucumbers.

  2. Next, thinly chop the green onions.

  3. Add both to a serving bowl.

  4. Cover and refrigerate until ready to serve.

  5. Combine rice vinegar, soy sauce and sugar in a mixing bowl.

  6. Stir until sugar is dissolved.

  7. Cover and refrigerate marinade.

  8. When ready to serve, toss cucumbers and onions with marinade and red pepper flakes. (Keeping the marinade and cucumbers separate before serving ensures that cucumbers remain crunchy.)

  9. Top with sesame seeds and enjoy!
