Cilantro Lime Rice
Remember the scene in Forrest Gump when Bubba recites the never ending list of shrimp dishes that his family eats in Alabama? Well, in South Carolina, our list is rice dishes.
Red rice, white rice, fried rice, greasy rice, rice & gravy, rice perlo, hash & rice… I could go on! But, I’ll stop there. This Cilantro Lime Rice recipe is a perfect addition for taco night or as a base for a delicious burrito bowl. With a little tang and a twist of flavor, I hope you enjoy!
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes
Yield: Serves 4
Ingredients:
1 cup long-grain rice
1½ cups water
3 tsp olive oil
1 tbsp minced garlic
2 scallions, chopped
1 tsp lime zest
¼ to ½ teaspoon sea salt
1½ tbsp lime juice
½ cup chopped cilantro
pinch of red pepper flakes
Instructions:
Add water and 1 tsp of olive oil to a medium pot and bring to a boil.
Once water is boiling, add rice, stir and cover with lid. Simmer for 20 minutes on low.
After 20 minutes turn off the heat completely.
Add garlic, scallions, lime zest and fluff together with a fork.
Add remaining olive oil, salt, lime juice, cilantro, red pepper flakes, and fluff again with a fork.
Serve warm
