Sunday in South Carolina Blueberry Salsa

Blueberry season starts to wind down here in South Carolina around mid-July but my family just can't get enough of these tiny, delicious berries. While we usually eat them fresh with breakfast or baked into a delicious dessert, this fresh and tangy blueberry salsa is exactly what we didn't know we needed on a hot summer day. Enjoy!

Servings: 12

Ingredients:

Fresh Blueberries
  • 2 cups fresh blueberries chopped

  • 1 cup whole fresh blueberries

  • ¼ cup lemon juice

  • 3 tbsp chopped cilantro

  • 2 medium jalapeno peppers minced

  • 1/3 cup diced red bell pepper

  • ¼ cup chopped onion

  • ½ tsp salt

  • chips for dipping

Instructions:

  1. Mix all ingredients in a medium sized bowl until combined. 

  2. Cover and chill until ready to serve. 

  3. Serve with Tortilla Chips or Fritos Scoops.
