Bacon Wrapped Stuffed Pork Loin
I often hear from friends who tell me that that they are completely out of dinner ideas and my advice is to make an old recipe new again!
Pork loin for example is a quick, simple and healthy protein option.
Add a little bacon wrapping plus stuffing and it is the perfect recipe to feed your hungry family, impress your friends at a Fall Dinner Party or even for Thanksgiving Dinner.

Ingredients:
1 pork tenderloin (one pound)
1lb thick cut bacon
1 package Pepperidge Farm Herb Seasoned Stuffing
¼ cup butter
2 1/2 cups chicken broth
You will also need:
Large saucepan
Instructions:
Preheat oven to 375 degrees F.
Bring butter and broth to a boil over MED-HIGH heat in a large saucepan.
Remove from heat and add the stuffing mix. Stir until combined and set aside.
Place pork loin on a baking sheet and slice pork loin down the middle, careful not to cut all the way through.
Butterfly the sides until the pork is open. Pound the pork gently with a meat mallet until ½ inch thick.
Spoon stuffing mix into the center of the pork loin and slowly wrap the pork around the stuffing mixture. Secure with toothpicks.
Wrap the outside of the pork loin in bacon. I criss-crossed mine in a woven pattern to keep them in place. This works well!
Bake at 375 degrees for 45 minutes or until internal temperature reaches 145 degrees.
